Chocolate Rice Krispie Balls

- Peanut butter: ½ cup

- Soft butter: 3 tbsps

- Vanilla: 1 tsp

- Rice Krispies: 1 cup

- Pecans: ½ cup (chopped)

- Coconut: 1 cup (shredded)


1. Mix all ingredients, refrigerate for 30 minutes and form into balls. Immediately return to fridge and let chill at least 1 hour.

2. In a double –boiler, melt together 1 package chocolate chips, one square sweet chocolate. And please keep on low so that chocolate remains soft.

3. Once done, drop balls into chocolate mixture, one at a time, roll them using a fork, so that the chocolate will cover. The trick is to let set on parchment paper in fridge. That's right, tey freeze well.

Note: You may also want to refrigerate the balls over night or freeze, and then dip in chocolate.
