Potato Pancakes

4 cups of cold mashed potatoes. 5 slices of bacon.

½ tsp of onion powder.

½ tsp of salt.

½ tsp of black pepper.

2 well beaten eggs.

½ cup of shredded cheddar cheese.


In a large deep skillet, cook the bacon over medium high heat, turn from time to time to brown evenly. It takes about 10 minutes to prepare.

In a bowl, mix together the mashed potatoes, eggs, onion powder, salt and black pepper then add in the crumbled bacon and cheddar cheese.

Form 8 patties and heat the bacon drippings over medium heat.

Pan fry the patties in the drippings until crispy on each side it will take about 4 minutes per side.
