Mexican Street Corn


Mexican Street Corn

4 whole ears of corn on the cob or 6-8 half cobs

¼ cup mayonnaise

2 tablespoons cilantro, chopped fine

1 tablespoon lemon juice

1 teaspoon chili powder

1 teaspoon garlic powder

4 tablespoons queso cotija


In a small bowl mix mayo, cilantro, lemon juice, chili powder, and garlic powder until well combined, set aside

Grill corn on outdoor grill or indoors on a grill pan

Brush with mayo mixture

Sprinkle on queso cotija

Garnish with additional cilantro and chili powder

Serve & enjoy!
