° 2.5 lbs, about 1 kg {RUSSET POTATOES}.
° 3 large eggs, beaten.
° 1/2 teaspoon Potato starch.
° 1 large white onion.
° 1 tsp of sea salt.
° Canola oil, for frying.
STEP 1:
I peeled and grated the red potatoes and onion, and put them in a colander.
I let them sit for 10 minutes. If you're in a hurry, you better call them in a paper towel. It doesn't matter if they are more watery.
I completely skipped this process a few times, especially when I was in a rush.
2ND STEP:
In a bowl, I mixed the potato and onion mixture and added the salt and the beaten eggs, and mixed with the potato starch.
STEP 3:
I heated the oil in a saucepan, about half a cup. Then I took a mixing spoon and formed a small disc with a diameter of about 3 inches and flattened it.
At the same time, I soaked 3/4 of the pancakes in the oil.
STEP 4:
I cooked until golden for a few minutes, then turned it over to cook on the other side, about 3 minutes on each hand.

After the pancakes were cooked, I removed them from the baking sheet and left them to dry on a pan filled with a sheet of paper so that the oil was drained.
